Ingredients

  • 175g Baking Spread

  • 175g Light Brown Sugar

  • 3 Large Eggs

  • 140g Self Raising Flour

  • 35g Cocoa Powder

  • 3tbsp Milk

  • 200g Milk Chocolate

  • 12 Heart Sprinkles

  • What You Need
  • Hand Whisk or Electric Whisk, Muffin/Cupcake Tin, Muffin Cases.

Directions

  • Add 175g Baking Spread and 175g Light Brown Sugar to a bowl and beat these together. For this recipe I’ve used an electric whisk but you can do it by hand, or with a stand mixer.
  • Add your Self Raising Flour, Cocoa, Milk and the 3 Eggs into the bowl and mix until fully incorporated.
*Note – Ensure not to overmix the batter.
  • Line a muffin tin with your favourite cupcake/muffin cases. For this recipe we are using a 12 hole muffin tin but you can use a smaller/larger tin.
  • Portion your batter into your cupcake/muffin cases evenly. I use an ice cream scoop but you can use a spoon. They should weigh roughly 40g each. You will want to fill your cases about half way, to ensure you leave enough room for the melted chocolate.
  • Preheat your gas oven at gas mark 4 or to 180C on an electric oven. Bake for 20 minutes.
  • Once baked melt your chocolate by breaking into small chunks and adding to a microwavable bowl and melt in short bursts (20 seconds) until fully melted.
  • Allow your baked cupcakes to to cool and then top with melted chocolate. Adding the heart sprinke/decoration.
  • Allow to chill in the fridge until the chocolate is solid.
  • Tuck in and enjoy!
